Zucchini Cakes

It won’t be long before we’re getting loads and loads of fresh zucchini from the garden. Those little plants are very prolific! Here is a recipe that my family enjoys a lot. They taste like crab cakes! Sometimes the recipe is called Imitation Crab Cakes.

 

Zucchini Cakes
1 ½ cup shredded zucchini
1 cup bread crumbs
2 tbsp grated onion
2 tbsp all- purpose flour
1 tbsp mayonnaise
1 tsp old bay seasoning
2 eggs slightly beaten
Oil for frying

After you shred the zucchini, put it in a couple of paper towels and squeeze the moisture out.
Add all the other ingredients to the zucchini except for the oil.
Make patties (not too thick) and fry til golden brown.
Serve with either dill sauce, tartar sauce,ketchup or seafood sauce.
