This is a delicious and easy bread that is great for breakfast, tea time or just snacking!
1 stick butter, softened
3/4 cup granulated sugar or use whatever you like in baking
1/2 tsp vanilla extract
2 eggs
1/4 cup sour cream
1 1/2 cups all purpose flour
1/2 tsp salt
1/4 plus 1/8 tsp cream of tartar
1/4 tsp baking soda
1/2 cup strawberry preserves
1/4 cup finely chopped nuts, I use pecans
Preheat oven to 350*F
Generously grease an 8×4×2 loaf pan and dust it with fine sugar. Cream together, butter, sugar and vanilla. Add eggs one at a time, beating well after each one.
In a medium bowl, sift together the dry ingredients; flour, soda, tartar and salt.
In another bowl, mix together the preserves and the sour cream. Alternately add the strawberry mixture and the dry ingredients to the creamed mixture, beating well after each addition.
Pour mixture into the loaf pan. Bake for 50 minutes. Test for doneness with a wooden pick.
