The holidays are upon us! Every year I scurry around the kitchen all of November through January, trying to pull together easy, nutritious meals for my family. so, I figured I share what I came up with.
Sometimes my meals are homemade, sometimes they are semi-homemade and sometimes, they are quick and easy!
Maybe my meals will help you plan and make easy, fast, nutritious meals while you’re as busy as can be.
Each week I’ll post my recipes and ideas. You can copy them and use them and even share the link to the recipes on your own blog or even your Facebook page.
Here are this week’s recipes:
Simple BBQ Chicken
Use your slow cooker for this. Put chicken legs, thighs, breasts or a combination of any parts in the slow cooker. Pour a bottle of BBQ sauce over. Slice an onion over all. Cover and cook on low for 6 hours.
To make BBQ sauce:
2 cups ketchup
8 tablespoons brown sugar
juice of half a lemon
4 tablespoons vinegar
4 tablespoons Worcestershire sauce
2 tablespoons melted butter
Combine all, pour over chicken, slice an onion over all, cook as described above.
Easy Rich Instant Mashed Potatoes
Make instant mashed potatoes according to the package instructions, except… replace half of the milk with sour cream. Add more milk a little at a time to reach desired consistency. Salt and pepper to taste.
Southern Creamed Lima Beans
Cook frozen Baby Limas according to package directions. When they are tender, pour out the water and add 2 tablespoons butter for every 8 ounces of Limas. Turn up the heat and melt the butter, allowing it to sizzle, add 2 tablespoons flour and stir well. Now add a little milk, a small amount at a time until the Limas are coated in the velvety butter/cooked flour mixture. Salt and pepper to taste.

Great ideas. I am into fast these days. I like “fast” tasting good!
