Potato Pancake Remix

Today I am participating in Wardee’s Tuesday Twister. Here is my contribution: Potato Pancake Remix.

These are a little different from my standard Potato Pancakes.  This recipe has spelt flour and flax seed to make it more nourishing and healthier for you.

My family did not detect a change at all, except for the child who walked into the kitchen as I was mixing them and saw the flecks of flax seed and thought I had used whole wheat flour!

Ingredients:

2 cups mashed potatoes, any recipe
2 organic, free-range eggs
Minced garlic and onion to taste
White pepper to taste
Enough spelt flour to make a stiff batter. Notice I said batter, not dough. You don’t want these so thick that you can’t spoon it out.

You will probably not have to add salt because most mashed potato recipes have salt in them.

Mix everything together well, adding the spelt flour gradually until you have a stiff batter that can still be spooned and mashed around in the skillet easily.

Heat some coconut oil in a heavy skillet over medium high heat. Drop potato pancake batter by tablespoonfuls into the hot oil and cook til deep golden brown.

I had a hard time getting a picture of the whole plate of them because of this…..

Serve with applesauce, sour cream or ketchup.

    Thank you for this. I have been trying to come up with a good way to make potato pancakes. Oh, yes, I totally understand what happens when a family member comes into the kitchen and “catches” me making something in a way that might be a little different!

      This one is pretty doggone good. I think the flax seeds make it thick enough that the eggs may be left out, worth a try if anyone can’t use eggs.
      I have to be soooo sneaky sometimes in the kitchen! LOL

    I’ve made these before only with unbleached flour . I LOVE them! I also like putting chives in the mix.

      I like them with unbleached flour, Amanda, that is how the original recipe was made. Chives would be delicious!

      I save mashed potatoes, even a tiny amount, and make them on the sly. teehee.
