Some of the things I’ll talk about on Homekeeping Haven are gardening, all kinds of food preservation methods including canning, freezing, drying food, salting and smoking; herbs, essential oils, herbal remedies; babies and children; sewing and handwork, homemade everything; farm animals and their care, chickens, rabbits, storing real-whole foods, creating order and peace in your home, nutrition for new moms, old-fashioned recipes and much, much more.

That’s really wonderful Sylvia. I really enjoy listening to your very sound advise. I have enjoyed hearing you talk about Spring Cleaning lately although for me it is Autumn Cleaning as here in Australia we are heading into our cooler months. Not quite as cold as you get over there though.
I was wondering if you grow Aubergine or Eggplant as we call it here? This summer we grew it for the first time and had a bumper crop and I would like to know some different ways to use them . Do you dehydrate them at all?

Yes, we do grow eggplant, though no one here really likes to eat them but me.
I usually roast them with salt and olive oil or coconut oil. I have fried them and made eggplant parmesan. I have dried them too by peeling, cutting into small chunks and salting, then draining, then drying. I store the chunks in jars. When you rehydrate they are just about like fresh eggplant. they can be used in casseroles, roasted or fried.
