I used to make flat bread out of whole wheat flour. Recently though I decided to use different grains, just to get more of them into our diet. this makes a very tasty bread that can be spread with all kinds of different things. We especially like refried beans and melted cheese on our flat bread.

1 cup brown rice flour
1 cup spelt
1 cup whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon sea salt
about 3 1/2 cups water

Mix all the dry ingredients together. Add water and mix until the batter is like pancake batter. It might not take all the 3 1/2 cups of water and it may take a little more, depends on the humidity and how dry your flours are.

Heat an iron skillet to medium high heat. Spray with vegetable cooking oil, or paint the cooking surface with oil. Ladle the flatbread batter into the skillet and allow it to cook until small bubbles form on the top of the batter. Turn and cook til done.

These don’t last long at our house but you can store them wrapped up well in the frig. I spread on refried beans and sprinkle on cheese then broil it til melted for our favorite dish.
