Beet Greens

Who would have ever thought you could make something so delicious as this from the green parts of a beet?

I threw this together in less than 10 minutes. The family loves it and its very healthy. Try it!

You will need:

  1. a bunch of beet greens, no certain amount
  2. bacon, enough to serve your family
  3. cooked white beans
  4. thyme and rosemary or herbs to your own taste
  5. dried tomatoes
  6. salt and pepper to taste

Chop the bacon into bite-sized pieces and fry it in a heavy skillet until done. Add the tomatoes, beet greens, beans and seasonings, cook til the greens are wilted. Season with salt and pepper to taste.

That’s it!  Now how easy was that?  And Deeee-licious, too.

    I cut them from beets that I grew myself. Here in the stores, when beets are in season, you can buy them with the greens still attached. You can also freeze beet greens.

    Did you buy beet greens or did you actually cut them from beets? I don’t think I’ve seen beet greens in the stores here. Although, I imagine any green would work.
